Story

This one's not gonna be about for long! It's the second coffee we purchased at our Indonesia special cupping event with Sucafina, it properly stood out on the table all clean and orangey, rude not to innit. So yeah, not really sure what this Indo wet hulled thing's about...

In 2019, Aulia Kahfi placed 9th in the Sumatra Prestige Cup for his excellent Wet-Hulled lot. We are thrilled to continue purchasing from him.

Aulia cultivates coffee on Rakyat Farm, which he inherited from his family. He has been involved in coffee production since his early teens but has always had a unique interest in specialty coffee. Since specialty coffee was not in high demand in his area during his teenage years, Aulia spent several years mining and selling Vesuvianite, a precious stone often found near volcanoes. He has since returned to coffee production.

Now in his early thirties, Aulia is entrepreneurial and enterprising. Using an old van or his friend’s car, he has expanded his business by purchasing a few bags at a time from neighboring farmers. He collects and processes ripe cherry from farmers in the Lukup Sabun, Pantan Sile and Ratawali neighborhoods. He’s also recently started buying cherry from Gegarang (Jagong Jeget).

Aulia selectively handpicks ripe, red cherry, or purchases cherry from neighboring farmers. He ferments cherry for 3 to 5 days and then pulps it. Once pulped, Aulia washes coffee in clean water and then ferments it in water anaerobically for 3 days before washing it again. He skin dries parchment for several days before hulling it and then drying it on his patio for a further 4 to 8 days. Aulia rakes coffee frequently to ensure even drying.

Does your coffee come as whole bean or ground?

We only sell whole bean coffee. This is to ensure you make the best cup possible and a big part of that is grinding the coffee just before using it.

If you're in need of a grinder, head to our brewing store.

What's the difference between espresso and filter roast?

We profile most of our coffees for both espresso and filter. In basic terms, espresso coffee is often more developed and slightly darker than a filter roast. This varies with each coffee and in general we roast our coffee to what is considered a light/modern profile. Which one is best for you depends on your intended brewing method.

Is your coffee roasted to order?

We roast multiple times throughout the week and dispatch online orders twice per week (at minimum). Due to the way we roast coffee, we recommend a minimum rest period of 10 days before brewing.
