I'm heading out to the dry mill in December, so I'll update with heaps more info when I get back, for now though you can have the same info as we did last time:

Colombian speciality coffee generally falls into one of two categories, Excelso (14-16 screen size beans) and Supremo (17+). This is cool, but what of the smaller beans? Well they usually get blended up regardless of quality and end up in the hands of commodity traders for peanuts. This lot is a new initiative from Caravela, they’ve taken all the little 12-14 Caturra beans from their primo dry mill in Quindio and kept them off the c-market. So this is the bits and bobs from some of the best Colombians money can buy, all mixed up and sold at a fair price. It’s soo bloody nice!

Peebies come from the word peaberries. They are beans that are sized less than screen 14. Our
stringent quality analysis ensures that the coffees that we mill are of the highest quality but
sometimes there are great quality beans that don't meet the minimum size requirements for
certain preparations. Peebies are those great coffees that slip through the cracks.

Normally the cherry of the coffee plant contains two beans that develop with flat sides against
each other, like two halves of a peanut. Occasionally, one of the coffee beans doesn’t develop
the flat side and remains small and round, these are the peaberries. Peebies usually tend to
taste sweeter and more flavorful. About 5% of the world’s coffee falls into the peebies category
and Caravela buys this coffee for its interesting profile and in order to support producers’
incomes for beans that would otherwise not be sold as speciality coffee.

Peebies are a blend of coffees from different small scale producers and different regions, they are especially common
in Huila and Tolima. We carefully make this blend in our milling warehouse, it is essentially a
blend of a little bit of each of our best coffee lots!

Coffee FAQ

Does your coffee come as whole bean or ground?

We only sell whole bean coffee. This is to ensure you make the best cup possible and a big part of that is grinding the coffee just before using it.

If you're in need of a grinder, head to our brewing store.

What's the difference between espresso and filter roast?

We profile most of our coffees for both espresso and filter. In basic terms, espresso coffee is often more developed and slightly darker than a filter roast. This varies with each coffee and in general we roast our coffee to what is considered a light/modern profile. Which one is best for you depends on your intended brewing method.

Is your coffee roasted to order?

We roast multiple times throughout the week and dispatch online orders twice per week (at minimum). Due to the way we roast coffee, we recommend a minimum rest period of 10 days before brewing.
