Story

We’re gassed to introduce Finca Don Amado, a 5-hectare coffee farm perched in the highlands of Las Flores, Santa Bárbara. Under the watchful eye of Sandra Trochez, this farm is a testament to dedication and passion in coffee cultivation. Benjamin Paz said he could hook us up with some of Sandra’s coffees when he was over last year, and it came off—sweet.

The story of Finca Don Amado is as inspiring as the coffee it produces. Sandra and her late husband, Amado Fernández, began their coffee journey in 2007 after Amado received a plot of land from his father, making him the third generation in his family to work in coffee. The couple married soon after and began transforming the land into their dream farm.

In 2010, their dedication paid off when Amado entered their coffee in the Cup of Excellence competition and clinched first place. This achievement changed everything, connecting the family with international buyers who have supported their coffee ever since. Tragically, in 2019, Amado passed away, leaving Sandra and their children heartbroken. Yet, just months later, Sandra decided to take up the mantle, carrying on Amado’s legacy. With the support of her eldest son and brothers-in-law, she continues to manage the farm, keeping its reputation for quality alive and thriving.

The Santa Bárbara region, where Finca Don Amado is located, is a powerhouse in Honduran coffee production. Known for its high altitudes and nutrient-rich volcanic soils, it’s a dream landscape for coffee cultivation. But it’s not without its challenges. The farm’s proximity to the jungle brings frequent rain during the drying process, making advanced drying systems essential for maintaining coffee quality.

Coffee FAQ

Does your coffee come as whole bean or ground?

We only sell whole bean coffee. This is to ensure you make the best cup possible and a big part of that is grinding the coffee just before using it.

If you're in need of a grinder, head to our brewing store.

What's the difference between espresso and filter roast?

We profile most of our coffees for both espresso and filter. In basic terms, espresso coffee is often more developed and slightly darker than a filter roast. This varies with each coffee and in general we roast our coffee to what is considered a light/modern profile. Which one is best for you depends on your intended brewing method.

Is your coffee roasted to order?

We roast multiple times throughout the week and dispatch online orders twice per week (at minimum). Due to the way we roast coffee, we recommend a minimum rest period of 10 days before brewing.
